Monday is MEATLESS in our house. The only day in the week that we do not eat any meat, fish, or fowl.

This evening was eggplant Parmaginia (sp?).

Left-over pizzas (made 6 of them for Sunday dinner) and some grilled chicken with salad. Left-over strawberries in Gran Marnier sauce over ice cream for dessert.

I just got home from work. I got some chicken Quesidillias(sp?) in the oven right now. Freakin tired and I'm ready for bed but I got to watch the Ultimate Fighter at 11pm tonight. Will maybe light up a corona or something short.

Tonight was some black pepper chicken, vegetable chow mein, and stir fried eggplant with asparagus. My best attempt at homemade chinese. It was pretty good. There are no leftovers. Frown

I am in the first week of the South Beach Diet.

Had cracked pepper steak with a wine sauce, steamed broccoli,spinach, salad.

Been on this diet for 4 days and have shed 5 pounds. Want to drop 20 total.

Tonight, sirloin tips, sauteed mushrooms, with red peppers. Garlic roasted potatoes, steamed broccoli, carrots, and summer squash. Sweet peeper, cuke, and grape tomato salad, gonna throw in some mozzarella I'm making right now.

Making Chicken Marsala tonight....very easy, and tasty dish.

I don't know why Marsala wine is getting so difficult to get around here lately...I had to go to three different stores, and finally a specialty wine shop to get a bottle....very strange...
