3 fresh mint sprigs 2 tsp sugar 3 tbsp fresh lemon juice 1 1/2 oz light rum club soda
In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lemon juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.
I use simple syrup, instead of sugar,that i have infused with mint as well that i grow in the back yard.
equal parts water / Sugar (or splenda)
Heat water in a sauce pan, place mint leave in water. bring to just before a boil anf add sugar. Stir till sugar is totally dissolved.
take off heat and remove the mint leafs. pour into a bottle and allow to cool.
It keeps for a month.

Way to chuck Badfish! Simple syrup is key. As is getting those mint leaves muddled well at the bottom of the glass... I just happen to grow some too... I think I'll make up a batch tomorrow night. YUM!

Well, I'm ashamed to say, I've never had a Mojito. I do have all the ingredients, including the mint leaves growing out back. Maybe this will be my weekend experiment, complimented by a Partagas P2.....
Badfish is right about the mint syrup. I make it with a 1 to 1 proportion of granulated sugar and water, then stir in a big handful of torn mint leaves and let it macerate until it's completely cool. Strain the mint leaves and use that as your sugar syrup to give your Mojitos an extra bit of something nice. Keep it in the fridge for a couple of weeks, then make more.

damn, I made my first pitcher of Mojitos tonight with dinner, and I must say, what a perfect summer drink. A lttle bit girly, so I don't know if I'd order one at dinner or at the bar around here, but if I'm in a tropical destination they're perfect. I'll certainly make them myself to enjoy in the back yard with a gar.

You can make them with lime or lemon juice. I prefer lime juice myself, but lemon is the more "classic" ingredient.
