Ok... I must be missing something. Several people have recommended the Radio Shack 63-1032 indoor outdoor thermometer/ hygrometer. I purchased one and as far as I can tell it only reads humidity from the unit itself, not the remote probe. So my question is... does that not defeat the purpose of having the external display, so that I can leave it on my desk and not have to open my humidor to check the readings? Does anyone have any recommendations on this unit?

I have, I believe, the same unit. There is a tiny reset button located on the back of the sensor and another on the back of the central unit. Reset them both and they should link up. It's fairly easy but you'll need a paperclip or something to trigger the buttons. It goes over that in the instruction manual.

I too use this same unit and ou are spot on. Make sure you reset the sensor and central unit to link them up, I used a sewing pin, didn't have any paperclips small enuf.

I guess the silly question I have is... The unit only reads indoor humidity. That means that I have to stick the entire Radio Shack thing in the humidor for humidity readings. Therefore still not making it possible to read the unit without opening the humidor. Am I missing something here?

I just looked it up on the radio shack website and it seems like the unit you have isn't ideal for a humidor setup. The probe does appear to only measure temperature. You need to get one that sends both temperaturew and humidity to the main unit (which may or may not measure the temp & humidity of where it's placed, although this shouldn't matter).
...and in case it isn't covered in the instructions - use the channel button on the main unit to select which remote unit is being displayed. I have several remotes, each with their own deviation of at least a few % from my other digital hygrometers.
