Tonight I'm BBQing some chicken breasts and a Pork loin. To go with it, some garlic mashed potatoes and a garden salad.

Smokie... nice!

I made Roast chicken with a Cuban Mojo sauce. Oven roasted some Vidalia onions and sweet potatoes with a fennel spice rub on the side. Dessert was fresh strawberries flambeed in cognac over vanilla ice cream. Then out to the porch with a nice glass of Dom B&B (Benedictine/Cognac) and a Oliva "X"... a great night to unwind.

It's all about what you find relaxing. After a week of work-related battles and traffic, I really unwind thinking through the menu for the weekend and then making it happen. You're invited for dinner anytime. But you gotta fix that truck before you try driving all the way down here! Wink

Andy, those flambeed strawberries sound great. I just whipped up some chili garlic butter using freshly roasted pasilla chilis. I am doing some ribs again today with a chipotle honey barbecue sauce I whipped up. I will probably serve them with potatoes or some other veggies tossed in this chili butter. I just had some on a bagel. DAMN this stuff is good.

Yesterday morning I woke up hungover as a mofo. What better time to make a huge omelette, I thought. Well, huge doesn't accurately convey the size. It was an 18 egg omelette I made in a 14 inch frying pan. It served 5 people adequately. We had some leftover grilled chicken, Sauteed onions and peppers, and some shredded cheese from the night before. I topped it with hot sauce and guacamole and it was incredible. I posted some pics below. There is also video of me flipping this bad boy but I don't have a web server to put it on anymore.

This weekend is going to be fun, I'm planning on smoking some shrimp and scallops, with homemade thyme pasta.

Haven't decided the rest of the weekend's menu though. Have to see what the parents wish to have for dinners. Smile

Alan, I have been messing around with roasted tomatoes for salsa. DANG that makes a nice little difference. I bet it makes a great tomato sauce too.

Pmp,

I have found that roasting them with some fresh garlic, olive oil, salt and pepper brings out so much flavor it's amazing. After roasting, transfer 'em to a sauce pan, add some white wine, fresh basil, adjust seasonings, and puree. I suggest using Romas or a vine ripened tomato. I like the jersey beefsteak tomatoes, but you can only get 'em in NJ.

I love homemade tomato sauce. I make it at least once or twice a month usually with big A$$ meatballs. That is a frequently requested dish around my house. I actually just ate 3 of them. I usually do it with canned tomatoes and it comes out great. I will have to try doing it with roasted tomatoes one day. Big Grin
