A friend has some caribou. I think I'll steal some and make a standing rib roast. Wood grill it. No idea on the sides yet.

Tonight was a nice big Greek salad with marinated and broiled shrimp on top. Plenty of feta, Kalamatas, cukes, fresh oregano and Orzo. Crusty bread and a poorly paired white wine. I still got plenty to learn about wine pairings...

Tonight I cooked chicken cutlets and a potato/broccoli/cheese mix...not bad...both my mother and brother loved it Smile
No wine for me though....I would have no idea on what wine to pair my dinner with....

Well, seems that the chicken is going to be tomorrow night's dinner. Decided to let the wife cook tonight.

The chicken is currently sitting in a honey/garlic brine for tomorrow night.

Wacco, I'd love to talk to you about your constant source for game meats some time. I have been sorely lacking in the game meats dept lately.

Tonight was homemade cheese ravioli with peas and proschiutto and garlic bread. Paired with the only bottle of wine I had in my cabinet, a barolo.

Food question: I keep seeing crusty bread mentioned in this thread. Being the gourmet chef that I am (think Chef Boy-R-Dee), I have no clue what this is. Can someone tell me?

MCD, crusty bread = fresh baked bread, something like from a decent bakery. If you can find one, the chain "panera" makes some very good breads.

Crusty breads tend to have a thicker crust on them as well. There is very little in this world like a fresh baked sour dough baugette with fresh churned butter.

For dinner tonight I'll be starting off with a simple salad w/ breadsticks, followed up by a Vegetable Corn Chowder. After that will be the main course of Soy Marinated Grilled Chicken served over a bed of Asparagus and Top Sirloin Steak Grilled with a Warm Plum Tomato Salsa. And for dessert I'll be making Baked Pears in a Caramel Sauce served a la mode with fresh blueberries. Yummy.

WEDNESDAY!!! It's Prince Spaghetti Day! Making spaghetti with elk meat sauce and Italian sausage. Probably will convert some day old bread (Portuguese pops) into toasted garlic bread.

Tonight, after midnight when I get home I am going to assemble the turkey and wild mushroom ravioli that I started earlier today. Over that will go a little EVOO with some truffle butter Then I will make a nice salad with some fresh basil and mozarella cheese. To finish I will serve it with a baguette smothered in roasted red pepper aioli. I will accompany this with a glass of the barolo from last night and afterward a nice corojo cigar, maybe an edge or camacho. By that time it will be close to 2 in the morning so I will hit the hay and dream of good food, fine women, and tasty cigars. Happy Wednesday everyone!

Thats because you are a shi talker. Shi take mushrooms are da bomb. I am all about finding a nice fatty shi take mushroom in a steaming bowl of udon. It is practically the best part of going out for sushi.

Threw together somethin' kinda cool tonight.

First I made some pizza dough(my own beer recipe, Stone IPA this fine day)

Then I grilled up some chicken breasts in the Webber with some hickory chips.

Then I shredded the chicken and soaked it in some BBQ sauce.

Next I worked out the dough, layed out some mozzarella, added the chicken, some onions, garlic and more mozzarella and made it into a calzone style dish.

IT WAS SO GOOD!!!

The original dish sounds good, but I'm abig leftovers fan and that sounds great!!

Tonight the fiance and I made chicken parmesan, manicotti, green salad with gorgonzola vinagrette and garlic bread. The wine was yellowtail shiraz/cab blend. The meal was good. The wine was too sweet IMO. I switched to whiskey and now all is well with the world.
