Cooking a pot roast this weekend, any suggestions. I am possibly thinking a red wine honey and thyme recipe on food tv.com Anybody else have any suggestions.

Yankee Pot Roast:

In a dutch oven brown a diced onion in some olive oil.

Using whatever cut of meat you usually but (we use brisket) brown the meat in the dutch oven with the onions.

Add one can Campbells Tomato Soup and once can Campbells Onion Soup.
Add water and allow to simmer

Add carrots, celery and diced potatos after 1 hour of simmering and allow to simmer for another hour.

Remove meat from the pot and slice then replace it in the pot and allow it to sit refrigerated overnight.

Rewarm before serving.

Brilliant Doc, thanks for the input. The girlfriend was impressed I was actaully able to cook something that didn't involve the BBQ grill.

I pot the roast in a crock pot with some Worcester Sauce, Cabernet an onion, freshly diced garlic, some carrots and potatoes. I then cook it on slow for about 8 hours.

Same recipe as Doc's but my wife omits the tomato soup and substitutes crushed tomatoes.She also substitutes beef stock for the onion soup.
