The wife just threw together some infused olive oil dappled on hard crust italian bread to go with fresh apples and toasted brie for our appetizer. Then we'll have a fresh Italian salad of tomatoes, basil and long hot peppers (all fresh from my garden) along with grilled, marinated venison tender-loin steaks and sour cream baked potatoes. ummm-ummm...

Just mixed all the spices and layered 3 pork rib racks. Will let then rest for minimum of 24 hrs and soak in all the flavors. Mixed up all the ingredients and simmered the BBQ sauce and now letting it cool down. Will pop in the smoker tomorrow for a slow mesquite smoking at about 220 deg for several hours. We will have fresh corn on the cob, smoked pork ribs, chili beans and rice tomorrow afternoon. Will probably have a PSD4 on the deck while Herschel (the family dog member)and I monitoring the smoker.
Wish some of you fellas could come on over and share the feast, have a couple smokes, a few drinks and BS the afternoon away. It's sweeties birthday and a custard filled chocolate birthday cake will follow.

Hey there Chirashi San, What time do I need to be there? Damn, I wish I could! Last night was a "wurst" fest - White Brats, Smoked Sausage and Knockwurst served with lots and lots of red cabbage and potatoes. And beer...
Tonight was filet of sole with a brown butter tarragon white wine sauce.

Can't wait to hear how they turn out Bill. Alan gave me a killer recipe for the ham I defrosted and I'll be doing that for dinner with some homemade coleslaw. Lunch is fettucine with fresh clams (can't miss pasta on Sunday!). Enjoy!

I smoked a brisket yesterday and it was pretty damn good. I got my dad a new pit for his birthday in July, I liked it so much he got me on for mine. Ive been Quing my @$$ off with it. Take care guys and enjoy today, I'm working a little OT today. Later.

They came out Awesome man. The Brisket was great and the rotisserie chicken (which I don't do oftern at all) was a nice suprise. I had it on the rotisserie for a bout 1.5hrs and it came out with a crisp golden brown skin and dripping with juice.
