Barbera olive oil is an unfiltered, full-bodied Sicilian olive oil made from handpicked Nocellara, Ogliarola, & Biancolilla olive varietals, which are stone ground & first-cold-pressed.
The label says they use a centrifuge in their process after the grinding.
You know Vision i explained this all to you already in your earlier 3 olive oil posts. Why do you ask for help then shot the messenger because you don't like the message.The oil if the olives are stone ground and first cold pressed was my only concern. If someone as you say chooses to use a centrifuge after that on an unfiltered oil. For what purpose i cannot imagine, God bless them and you as well. The oil is not being extract with the centrifuge but in the traditional manner. Once again Use what you like in the end you are the person that has to be happy with it not me. In the future i shall refrain from answering your olive oil posts. As it has become quite evident you really have made up your mind and don't seek help but rather to raise your post count.

I have tried for several years to like olive oil, to no avail. Normally I don't keep trying to like a food or drink, but I find I like authentic Italian food. That makes me think they are using something much different. The ones I have tried, admittedly cheap, all have a scorched flavor aftertaste that I find unappealing. Any recommendations for someone who might really like olive oil, just not something overwhelmingly strong?

Smoker99, get a bottle of mild, inexpensive oil of decent quality from the supermarket. Follow the instructions I made earlier to infuse it. When it's done try it with some bread(maybe will a touch of salt) or on pasta.
The oil I remember comes from Provence, France and is called "James Plagniol"...there is none better in terms of aroma and fragrance. Very difficult to come by but worth the effort.
There is no better olive oil in the world than produced in Greece. The good stuff is rarely available commercially, as they keep most of it for themselves. Crete and the Peloponnese, and Mytelini, are the best producing regions. I get mine from Crete, rich dark green, organic. Western part of the island. Probably go through 40-60L a year.

Ya know, back in the old days, the Greeks used to drink olive oil as a beverage, it wasn't just to add in food, it was like how we drink soda or something like that. Romans did too, as well as clean with it.
I don't know that modern tastes would like to drink it as a beverage, I'll have to try it.

well. i can tell you that in Greece, olive oil is used for everything in cooking. i don't see any butter or margarine used. just olive oil. even in desserts, frying, etc etc.
don't know if it's still done, i'm sure some old timers in remote locations still.. but they used to gather the oilve oil after it was used to cook a few times, into large vats, then they would process it to make soap to bath with.. and i'm talking even 20-30 years ago.

Hey Don, If you read this, I was curious how long you usually stay in Italy. In the Spring on 2011, I'm looking to make a trip and was wondering if you'll be around in springtime.
