My Sicilian grandmother used to make me eat lentil soup during Lent (hence its name?). My wife wouldn't make it from scratch but Progresso's canned lentil soup is very good. I throw in some real bacon bits for flavor.
Alessi makes a good dry lentil soup...add water and cook in a saucepan. Garnish with a drizzle of olive oil and some crumbled hot sausage, and you've got a decent dinner.
Wy wife uses an old Slovak/middle-European recipe (probably common throughout Germany, Czech, Poland, etc.) that uses a significant amount of lemon juice. Quite delicious and it really lightens up what is otherwise a very heavy meal.

Actually LENTILS look like a lens. The latin word for lens is lentil (or something like that) so these little lentils are actually little lenses. I don't know if they are in fact served during lent, but my wife makes great lentil soup with a little bit of ham. She also makes a great split pea soup.
In fact, she makes a number of soups, Ministrone (that is a meal in itself), Chicken soup with matzoh balls, turkey soup and a gaspacho to die for.
