Okay, I have read numerous recipes for Mojitos and this may be a silly question, but what type of mint are they talking about? Spearmint, which I have growing in my yard or something else?

Yes Spearmint is my favorite and what is in the original recipe.But i have on occasion met some who make it with Peppermint.I personally prefer Spearmint but hey variety is the spice of life enjoy.

Make a simple syrup with one part sugar, one part water. Bring just to the boil until the liquid is clear. Shred a couple of big handfuls of mint and put it into the syrup and let it cool to room temperature. Then strain the mint. It'll keep in the fridge for a long time.
Use this mint syrup in your mojitos instead of plain syrup or sugar. It'll make all the difference.

In my side yard I have a patch of wild mint that grows in the summer, it is about 30' wide and about 50' long and the mint in a good year is between 4-5' tall, makes the best mojito I have ever had, it has a lot of natural sweetness to it, if I am not smoking a cigar while cutting the grass I will pick some leaves and chew on them while cutting the grass, AMAZING!!

rrg, I do the same thing. I have mint growing in my back yard also and will chew it if I am not smoking. Jack, putting the mint in the syrup is a great idea.
