Just depends. Sometimes I like it neat other times with a cube. I too am a huge Pappy fan as well and Buffalo Trace is my favorite distillery. 35 minutes from where I used to live.
Depends on the bourbon. If it's a "low" proof of like 90 or 100 (Woodford, Knob) I'll add a dash of water or an ice cube. If it's like those barrel-proof bourbons that are like 133 or 147 proof and such, two ice cubes per finger. I think a bit of water always opens up a bourbon and makes it taste better.
I'm not an expensive taste kind of person though. Wild Turkey 101 is my standard with Woodford as an everyday for a more refined bourbon.
I like it neat with water on the side. I am not much of a bourbon connoisseur as I very much enjoy the huge bottle of Jack Daniel's you can get at Costco and consider Woodfood the "good stuff".

I attended a Bourbon tasting years ago that Booker Noe hosted (Booker's is my fav Bourbon) and he said he always added a dash of good branch water to open of the flavor. So, for the super hi-test Bourbon's I add a little water and find it does let you taste the Bourdon not just the burn. When drinking Makers or Knob I go with a single ice cube.
