My girlfriend and I went fishing in puerto vallarta and the captains mate made ceviche with the Mahi Mahi we caught right on the boat.
From my memory, here are the ingredients he used,(taken from a website: http://www.bigoven.com/137037-...-Ceviche-recipe.html) except he used Soy sauce instead of tobasco.



Ingredients1 lb Mahi mahi small dice about
1/2 c Fresh lemon juice
1/2 c Fresh lime juice
1 tb Tabasco
2 tb Kosher salt
3 5x6 tomato small dice
1 Large yellow onion small
1/2 Bu fresh chopped cilantro

InstructionsFrom the recipe books of Chef Sergio Verduzco: Mix all the ingredients allow to marinate at least 1 hr. Drain off excess juice and refrigerate. Good for 3 days maximum. Discard leftover after 3 days.

scoop it up with thin tortilla chips. AMAZING!

That's what I'm looking for. What's a 5x6 tomato?

Are you sure he didn't sure the Tabasco? Chilies are a primary ingredient. A few good recipes around use habaneros; and that's a little scary.

I am almost certain he used soy sauce. Funny part of it is he ran out and had to get some from another boat in the area. That's why I remember the soy sauce. I also do not remember there being a spicy kick to it.
My advice would be to try it both ways.

I usually eyeball my measurements so dont take them as the "Rule"

1 lb Super fresh Yellow Fin Tuna. Cubed
2 lemons, juiced
2 limes, juiced
1 garlic clove, minced
1/2 onion, minced
1/2 red bell pepper,
1/2 yellow bell pepper
1/2 green bell pepper
1/2 habanero, dice it up really fine
1 bunch chopped cilantro
Salt and black pepper to taste

Mix it up and park it in the fridge for half an hour.

*If the Habanero is too hot you can use a jalapeno. For even less heat you can use a couple serrano peppers. Either way my ceviche has to have some heat Smile

If you can get it, try fresh raw conch instead of the fish.
