I do a marinate with achiote, just a touch of vinegar, ancho chiles and garlic for swordfish (or any meaty fish) and it's great grilled in banana leaves.

That looks great Piller!

I have some banana trees back in the corner of my yard (both red & green). I never thought of using the leaves for cooking.... I'll have to try this method the next time I catch some nice fresh snapper or grouper.....should be excellent.
