I just bottled my latest batch. It is pretty good. It was made with blueberries, strawberries, and blackberries. I also added grape tannins for body and mouthfeel. The ABV is a whopping 14.5% but its nicely balanced. The nose is incredibly fruity. The berry flavor is simple but satisfying. I am pre-ordering some grapes next week to try my hand at some grape wine. I think I may start with a shiraz so I don't have to worry about oaking.

It depends. Fruit wine doesn't benefit from tons of age so most recipes say to bulk age it for 4-6 months after fermenting. This helps it clarify and smoothes it out. After that it is kind of like cigars. It may drink well now but better in 6 months etc... All told it takes about 4-6 months to make a drinkable product. I have heard that 3 years is a good amount of time to age this kind of wine but I have never kept a bottle more than 1 year.
