Came up with a new one this weekend - kinda like a combo between a mojito and a pina colada. In a small bowl, cut up chunk, fresh pineapple, soak it in good dark rum, add toasted coconut. Top with vanilla ice cream, more toasted coconut and thinly sliced fresh mint leaves... CRAZY GOOD
