Came up with a new one this weekend - kinda like a combo between a mojito and a pina colada.

In a small bowl, cut up chunk, fresh pineapple, soak it in good dark rum, add toasted coconut. Top with vanilla ice cream, more toasted coconut and thinly sliced fresh mint leaves...
