So, I'm having a dinner party tomorrow night and I'm going to be making a rib roast. I just don't know what I want to serve with it. Also, I think I want to make dessert but again, I have no idea what to make. Any thoughts?

Do a smashed garlic potato w/ skin with a little bit of good parmesan cheese not enough to make it sticky and too cheesy but just enough to give it flavor. As for veggies....uhhhh not my department

I agree with CG about the potatoes. I would maybe do a warmed ciabatta bread with oil (good EVOO, pressed garlic, a little parmesean, and a little red pepper flake). Maybe Chocolate mousse or a parfait for dessert? something simple. Just tossing some ideas out there!

I kinda want to do something other than steak and potates, but I think it is the only to go. For dessert, I think I'm making trifles (basically a parfait). I have a pretty easy recipe for them that will take no time to prep.
So, for what I have planned:
Bacon-wrapped scallops (frikking amazing) Bone-in rib roast with sage au jus and maybe mashed potatoes Raspberry or Blueberry trifle

you have to do some type of starch with the rib roast and you're right taters seem to be the only choice being pasta or rice really just doesn't cut it. Bacon wrapper scallops are definitely AMAZING!! This summer I'm going to attempt to come up with a killer glaze to go with them to add a little sweetness to the mix

Vithoun I just got back from orlando where I had an amazing side of mashed potatoes. Charlies Steakhouse serves a mashed potatoes side with Gorgonzala, Apple bacon, and scallions. A bit rich, but fantastic. Whip the potatoes with the cheese, and chopped bacon and scallion and top it off with some melted Gorgonzola.

I always fall back on young asparagus. Put on a baking sheet, drizzle with evoo and sprinkle with kosher salt (not too much). Roast at 450 for 10 to 15 minutes, Outstanding.

If I were you I would wrap the asparague with 1/2 slice of bacon and tooth pick and grill quick. You can tie together with twine then wrap with bacon marinate in Italian lite dressing.You can pre-cook the bacon alittle in the microwave.When can I come over????

bacon wrapped scallops, bacon wrapped rib roast, bacon wrapped mashed potates, bacon wrapped asparagus and bacon wrapped trifle. just kidding about the last part.
this meal is coming together nicely, the roast is set to go in at 3 pm and everyone will be here around 630. will post some pics of the food tomorrow or something. thanks for everyones suggestions.

Finally, some pics of my kitchen before and after the meal. There are no pics of the cooked food, as the guests were hungry. The only pics i have are of the trifle, which was prepped ahead of time, before the chaos. The pics are posted in an order that tell a story about how frikking hard it is to prepare a meal like I did in this kitchen.
