Is this a lost art. I remember when you went into a bagel shop. The guy would be rolling the bagel by hand. Then drop them in a vat of boiling water for about 10-15 seconds. Then pull them out sprinkle them with either salt or garlic or poppy seeds or everything my favorite by the way. Then into that hot oven for a crispy light soft bagel. Upstate in my residence in Putnam i have never seen this done. Most bagels are just baked in the oven or bought from commercial bakeries and just sold from a store front. That does not bother me because these poor souls upstate don't know any better. What bothers me is when i go down to the city its getting harder and harder to find an authentic bagel. Anybody know of any real bagel stores in any of the five boro's?

bagel with lox smidget of cream cheese with onions with a splash of red wine vinegar and tomatoes... heavenly. Great.. thanks sheep.. now I will have to go get some tomorrow.

H&H is the most popular, and usually rated the best...probably because it has been in movies, etc. That being said, I'm no fan of H&H bagels. They are good, but nothing special IMO.
hey sheepshead if you are out in queens try some places i like, slims bagels in fresh meadows on the lie service road e]b side. sorry i do not have the address. i just know when on the lie, i get off at the utopia pkway exit, ride the service road and its near a place called the ali baba restaurant no kidding. my other place is off of little neck pkway, in a service area. sorry no address. great bagels though. i kid you not

And if you are ever in Montreal, you have to visit Ultimate Fairmount Bagel on Fairmount Street in the east end. Then go to Jose's beer store just down the road on Duleth Street.
Cor: Steve, you have proven yourself to be a tremendous whack job.
I don't have any bagel shops around me that are really stand outs, so I recommend making your own. It's really not that hard, just time consuming, and you can fiddle with recipes to taste. Give it a shot!
Sad but true, Sheep. I used to live right outside of Rochester and the food standard in general is very low, not just for bagels. Everyone up there sings the praises of Brueggers bagels, which is a chain that produces a mediocre product at best. I actually felt bad for the Rochestarians who proudly hold Brueggers and Wegmans supermarket bakery as their highest bagel standard. Like you said, they don't know any better. I had a girlfriend from way, way upstate, we're talking almost Canadian border, and brought her down to NYC and the metro area. She said that she had no idea food could be this good. That epiphany went for bagels, pizza, and other standard stock consumables. I'll tell you though, many delis here in NYC outsource their bagels from a factory in New Jersey, and this is also sad that so many New Yorkers accept this low standard of bagel for the sake of convenience and price. Food seems to get better and worse at the same time.
