That is very good coffee--I like it the best of all the Mayorga coffees. It is excellent as an expresso or mixed half and half with either Sumatran or columbian coffees.

Always grind as fine as possible so that the contact area is maximized and you will get a good cup.

Further, I would advise against using distilled water as the minerals in normal tap water often lend further tastes(distilled always seems to make a flat tasting cup.)

Enjoy!

If you are going to order beans and pay for shipping, why not buy fresh roasted? I bet those Mayorga beans have been sitting in the bag for months, if not longer. Order direct from a roasterie. They are so fresh that if they are not packed right, the CO2 will burst the package. Fresh roasted beans are just so much better. The bloom given off when you add the water is just incredible with fresh beans. Do a little check...if you add water and there is not a large foaming reaction...your beans are flat and old.

Also, I would not recommend grinding them all that fine unless you have a high end grinder...which most people do not. If you use a cheap grinder to grind fine, you will overheat the beans and also get a sooty cup.

How does a high end grinder grind the beans differently and not overheat the beans as opposed to a cheep grinder? I have a Mr Coffee Precision grinder with the Chamber Maid cleaning system.

I do not have a coffee maker. I will be making espresso with my Mr Coffee espresso machine.

Well there are 2 basic types of electronic grinders.

Most grinders under 100 bucks are the weed whacker types. These have a blade and basically smash and shatter the beans. They rotate so fast that they cause excess friction and there is absolutely no way to control for consistency of the grind size. It's like putting a piece of glass into a food processor...you will end up with pieces of all unpredictable sizes...although the length of time you grind will average out to a course/medium/fine. The worst part is the over heating and since the beans are shattered, you get alot of powder which ends up being soot in your cup.

Then you move up to actual grinders. These are electronic versions of the old hand grinders (which are almost still the best). They have conical burrs that rotate against each other and grind a dosed set amount of beans. What comes out the other side of these conical grinders is almost no powder, and uniform grinds. Plus very little heat in the process. Unfortunately these can cost quite alot. Anywhere from 150 to well over 1,000 bucks. But they sell for that much for a reason...they work, and they make a difference....especially for espresso grind. But you can get around the cost by using the old fahioned hand grinders ...which are amost as good as the absolute best electric grinders and cost a little more than an expensive balde grinder.

Sobek is right. I rarely make coffee but when I do I use a small hand grinder and a press. I pick up the freshly roasted beans at a local market and use them the same day. the differnec between fresh roasted coffee and stuff sitting a while is like the difference between a machine made cigar and a good handrolled.

It was a coffee junkie friend of mine who turned me on to the difference. I had always hated coffee before then.

I will admit that usually I don't have the time so I use coffee pods (let the bashing begin) as fresh beans end up going stale before I can use them in sufficient quantities.

The coffee got here today and I tried a cup of espresso and I like it. Much better than the grocery store stuff I have been drinking.
